Bir\u00e7ok topluluk, adam\u0131zda ya\u015fam\u0131\u015f ve her biri buraya kendi k\u00fclt\u00fcr\u00fcnden farkl\u0131 farkl\u0131 \u00f6zellikler b\u0131rakm\u0131\u015ft\u0131r. Her \u00fclkede oldu\u011fu gibi adam\u0131zda da yemek k\u00fclt\u00fcr\u00fc \u00e7ok eski zamanlara dayan\u0131r. Ge\u00e7mi\u015fte K\u0131br\u0131s\u2019a daha \u00e7ok Anadolu topluluklar\u0131n\u0131n g\u00f6\u00e7 etti\u011fi ve yerle\u015fik hayata ge\u00e7ti\u011fi s\u00f6ylenmektedir. Filistin, M\u0131s\u0131r, Suriye, L\u00fcbnan vs. gibi \u00fclkelerden de insanlar\u0131n adaya geldi\u011fi ve bir s\u00fcre ya\u015fad\u0131\u011f\u0131 s\u00f6ylenmektedir. Bu \u00fclkelerin yemek k\u00fclt\u00fcr\u00fcnde bulunan ve ge\u00e7mi\u015ften g\u00fcn\u00fcm\u00fcze kadar gelen bir\u00e7ok \u00fcr\u00fcn adam\u0131zda halen kullan\u0131lmaktad\u0131r. \u00d6rne\u011fin adam\u0131zda yeti\u015ftirilen, tavuklu veya etli sebze yeme\u011fi olarak pi\u015firilen molehiya yeme i\u00e7me k\u00fclt\u00fcr\u00fcm\u00fcze Arap k\u00fclt\u00fcr\u00fcnden gelmi\u015ftir. Ayr\u0131ca adam\u0131z bir\u00e7ok imparatorlu\u011fun s\u00f6m\u00fcrgesi olmu\u015f ve buraya gelen her imparatorluk adaya yeme i\u00e7me k\u00fclt\u00fcr\u00fcnden \u00f6zelliklerini katm\u0131\u015ft\u0131r. \u00d6zellikle bir s\u00fcre aday\u0131 y\u00f6neten Bizans \u0130mparatorlu\u011fu adan\u0131n k\u00fclt\u00fcrel yap\u0131s\u0131n\u0131 etkilemi\u015ftir. Venedikliler, L\u00fczinyanlar, Araplar vb. bir\u00e7ok medeniyeti uzun s\u00fcre i\u00e7erisinde bar\u0131nd\u0131rd\u0131ktan sonra K\u0131br\u0131s, Osmanl\u0131 \u0130mparatorlu\u011fu\u2019nun ve \u0130ngiltere\u2019nin s\u00f6m\u00fcrgesi olmu\u015ftur.<\/p>\n<p>1900\u2019l\u00fc y\u0131llar\u0131n ba\u015f\u0131ndan itibaren K\u0131br\u0131s\u2019ta do\u011fum g\u00fcn\u00fc, d\u00fc\u011f\u00fcn, s\u00fcnnet gibi etkinlikler \u00e7ok kalabal\u0131k kutlan\u0131r ve \u00e7ok fazla miktarda yemek yap\u0131l\u0131rd\u0131. \u00d6zellikle tavuk ve bu\u011fday ile yap\u0131lan herse bu gibi g\u00fcnlerde \u00e7ok b\u00fcy\u00fck bir kazan\u0131n i\u00e7erisinde sabahtan ak\u015fama kadar pi\u015firilir ve misafirlere sunulurdu. Ayn\u0131 \u015fekilde gollifa dedi\u011fimiz i\u00e7erisinde; susam, badem, nar, kuru \u00fcz\u00fcm ve bu\u011fday bulunan, genelde tatl\u0131 olarak y\u0131lba\u015f\u0131 kutlamalar\u0131nda yenilen ve bu gibi kalabal\u0131k etkinliklerde yer alan di\u011fer bir geleneksel yiyece\u011fimizdir. Bayramlarda, ekmek kaday\u0131f\u0131, tel kaday\u0131f\u0131, \u015fammali ve g\u00fclla\u00e7 gibi tatl\u0131lar\u0131m\u0131zdan mutlaka bir tanesi her evde yap\u0131l\u0131p misafirlere ikram edilir. G\u00fcn\u00fcm\u00fcz ko\u015fullar\u0131ndan dolay\u0131 \u00e7ok fazla yap\u0131lmasa da yap\u0131l\u0131\u015f\u0131 zahmetli kebap \u00e7e\u015fitlerimiz vard\u0131r. \u00d6rne\u011fin; kuyu kebab\u0131 ve h\u0131rs\u0131z kebab\u0131 (gleftiko). Bunlar\u0131n d\u0131\u015f\u0131nda meze olarak yenilen ve bir\u00e7ok insana garip gelen \u201cgaynanm\u0131\u015f veya yahni garavolli\u201d dedi\u011fimiz d\u00fcnyan\u0131n salyangoz olarak bildi\u011fi hatta Frans\u0131zlar\u0131n \u00e7ok \u00fcnl\u00fc bir yeme\u011fi olan eskargot, yeme i\u00e7me k\u00fclt\u00fcr\u00fcm\u00fczde b\u00fcy\u00fck bir rol oynar.<\/p>\n<p>\u00dclkemizde eskiden restoranlarda yeme i\u00e7me k\u00fclt\u00fcr\u00fc fazla yayg\u0131n de\u011fildi. \u00d6zellikle k\u00f6ylerimizde halen insanlar\u0131m\u0131z K\u0131br\u0131s k\u00fclt\u00fcr\u00fcn\u00fc ya\u015fatmakta ve tan\u0131tmaktad\u0131r. Fakat merkez \u015fehirlerde ayn\u0131 konu g\u00fcnl\u00fck hayatta tam olarak ge\u00e7erli de\u011fildir. Toplumumuzun \u015fu an i\u00e7inde bulundu\u011fu yo\u011fun i\u015f temposundan dolay\u0131 restoranlarda yeme i\u00e7me k\u00fclt\u00fcr\u00fc fazlas\u0131yla yayg\u0131nla\u015fm\u0131\u015ft\u0131r. Bu y\u00fczden insanlar\u0131m\u0131z kendi yeme i\u00e7me k\u00fclt\u00fcr\u00fcnden uzakla\u015f\u0131p daha \u00e7ok de\u011fi\u015fik tatlara y\u00f6nelmi\u015ftir. \u00d6zellikle en \u00e7ok duydu\u011fum c\u00fcmleler \u201cBug\u00fcn lazanya(1) m\u0131 yesek?, Be garda\u015f ge\u00e7enlerde bir t-bone steak(2) yedim inanaman m\u00fckemmeldi!, E yani \u015fimdi baconl\u0131, yumurtal\u0131 bir hamburgercik olsa yemezdik?\u201d ve daha sayamayaca\u011f\u0131m bir \u00e7ok buna benzer fikirler duydu\u011fum do\u011frudur. De\u011fi\u015fik tatlar denemenin yanl\u0131\u015f oldu\u011funu s\u00f6ylemiyorum; bu \u00e7ok g\u00fczel ve do\u011fal bir \u015fey fakat bu gibi Avrupai yeniliklerden dolay\u0131 kendi yeme i\u00e7me k\u00fclt\u00fcr\u00fcm\u00fcz\u00fc unuttu\u011fumuz da yalan de\u011fildir. \u00d6rne\u011fin ben fajita(3) yemek yerine \u015feftali kebab\u0131n\u0131 tercih edenlerdenim. \u015eeftali kebab\u0131 adam\u0131z\u0131n en \u00fcnl\u00fc yemeklerinden olmakla beraber isminin bir hikayesi vard\u0131r. Sokakta kebap yapan Ali Usta bu kebab\u0131 yapm\u0131\u015f ve insanlar taraf\u0131ndan \u00e7ok be\u011fenildi\u011fi ve benimsendi\u011fi i\u00e7in bu kebaba \u201c\u015eef Ali Kebab\u0131\u201d ismini vermi\u015ftir. Daha sonra zamanla kebab\u0131n ismi a\u011f\u0131zdan a\u011f\u0131za de\u011fi\u015ferek \u201c\u015eef Ali Kebab\u0131\u201d, \u201c\u015eeftali Kebab\u0131\u201d olmu\u015ftur. Asl\u0131nda k\u00fclt\u00fcr\u00fcm\u00fcz\u00fcn unutulmas\u0131nda bir etken de kendi k\u00fclt\u00fcr\u00fcm\u00fcz\u00fc tan\u0131tmamam\u0131z ve kendi yeme i\u00e7me k\u00fclt\u00fcr\u00fcm\u00fczle ilgili yeterli say\u0131da yemek kitab\u0131m\u0131z\u0131n bulunmamas\u0131d\u0131r. D\u00fcnyadaki bir\u00e7ok \u00fclke kendi yeme i\u00e7me k\u00fclt\u00fcr\u00fcn\u00fc \u00f6lesiye sahiplenmekte, tan\u0131tmakta ve gerek kitaplar\u0131yla gerek di\u011fer yollarla unutulmamas\u0131n\u0131 sa\u011flamaktad\u0131r. Adam\u0131zda yok denilebilecek kadar az say\u0131da K\u0131br\u0131s\u2019\u0131n geleneksel tatlar\u0131n\u0131 tan\u0131tan kitab\u0131m\u0131z ve K\u0131br\u0131s mutfa\u011f\u0131 sunan restoran\u0131m\u0131z vard\u0131r. \u00dclkemiz ne kadar ambargo alt\u0131nda ve resmen i\u015fgal alt\u0131nda olsa da ne olursa olsun \u00e7abalamak ve k\u00fclt\u00fcr\u00fcm\u00fcz\u00fc tan\u0131tmak i\u00e7in m\u00fccadele etmeliyiz.<\/p>\n<p>Yeme i\u00e7me k\u00fclt\u00fcr\u00fcm\u00fczde daha sayamayaca\u011f\u0131m kadar \u00e7ok yiyecek ve i\u00e7ecek vard\u0131r. Daha \u00f6nce de bahsetti\u011fim gibi k\u00fclt\u00fcr\u00fcm\u00fcz\u00fc unutmamal\u0131, tan\u0131tmal\u0131 ve ya\u015fatmal\u0131y\u0131z. Yeni ve de\u011fi\u015fik tatlara ne kadar ilgi duyuyor olsak da unutmamal\u0131y\u0131z ki \u00fclkemizi tan\u0131mak isteyen insanlar da ayn\u0131 \u015fekilde bizim geleneksel yiyeceklerimize ayn\u0131 ilgiyi duyuyordur.
