Ovalardan toplanan yabani otlarla yap\u0131lan bir\u00e7ok yeme\u011fimiz, ayr\u0131ca tur\u015fu ve \u00e7e\u015fitli yiyeceklerimiz de vard\u0131r. K\u0131\u015f aylarda \u00e7\u0131kan ve yenilebilir olan bir\u00e7ok otumuz vard\u0131r. \u00d6zellikle en bilineni ve vitamin de\u011feri en y\u00fcksek olan ayrellidir. Ayrelli d\u0131\u015f\u0131nda, yumurta otu, lapsana, gavcar mantar\u0131, hostez, gabbar ve daha bir\u00e7ok yabani ot ovalar\u0131m\u0131zdan sofralar\u0131m\u0131za girmektedir.<\/p>\n<p>K\u0131br\u0131s yemek k\u00fclt\u00fcr\u00fcnde yap\u0131lan \u00e7o\u011fu yemek, hamur i\u015fi, macunlar ve daha bir\u00e7ok yiyecek eme\u011fe dayal\u0131 ve \u00e7ok me\u015fakkatli bir s\u00fcre\u00e7ten ge\u00e7erek yap\u0131lmaktad\u0131r. Sizlere, unutulmaya y\u00fcz tutmu\u015f fakat \u00e7ok de\u011ferli olup unutulmamas\u0131 gereken bir ekme\u011fimizi anlataca\u011f\u0131m.<\/p>\n<p>G\u00fcn\u00fcm\u00fczde \u00e7ok fazla yap\u0131lmayan fakat k\u00fclt\u00fcr\u00fcm\u00fcz\u00fcn bir par\u00e7as\u0131 olan \u201cNohutlu Ekmek\u201d genelde yaz aylar\u0131nda yap\u0131lan bir ekme\u011fimizdir. Eskiden her k\u00f6yde yayg\u0131n olarak yap\u0131lan nohutlu ekmek, art\u0131k yap\u0131m\u0131 tercih edilmiyor. Nohutlu ekmek Baf\u2019tan g\u00f6\u00e7 alan Omorfo taraf\u0131ndaki k\u00f6ylerimizde daha yayg\u0131n olarak yap\u0131lmaktad\u0131r. Nohutlu ekme\u011fin genellikle yaz aylar\u0131nda yap\u0131lmas\u0131n\u0131n nedeni havan\u0131n s\u0131cak olmas\u0131d\u0131r. S\u0131cak havan\u0131n tercih edilmesinin nedeni ise asl\u0131nda ekme\u011fin en \u00f6nemli malzemesinin yani mayan\u0131n h\u0131zl\u0131 bir \u015fekilde olu\u015fmas\u0131n\u0131 sa\u011flamak i\u00e7indir. Nohutlu ekme\u011fi yaratan asl\u0131nda nohut mayas\u0131d\u0131r ve yap\u0131m a\u015famas\u0131 \u00e7ok zordur. Nohut mayas\u0131 denildi\u011fine bakmay\u0131n, i\u00e7erisinde nohut d\u0131\u015f\u0131nda bir\u00e7ok \u00e7e\u015fitli baharat vard\u0131r. Ve asl\u0131nda ekme\u011fe o m\u00fckemmel kokuyu veren de bu malzemelerin t\u00fcm\u00fcn\u00fcn birle\u015fimidir. Mayan\u0131n i\u00e7erisinde sekiz \u00e7e\u015fit baharat bulunur. Bu baharatlar; tuz, \u015feker, kimyon, mahlep, muskat, zencefil, karanfil ve defne yapra\u011f\u0131d\u0131r. Ayr\u0131ca ayn\u0131 baharatlar sonradan ekmek hamurunun i\u00e7erisine de konur.<\/p>\n<p>Mayan\u0131n yap\u0131m\u0131 \u00e7ok zor oldu\u011fundan k\u00f6ylerimizdeki kad\u0131nlar anla\u015f\u0131r ve her sene mayay\u0131 tek bir ki\u015fi yaparm\u0131\u015f. Mayan\u0131n yap\u0131m\u0131 genellikle bir g\u00fcn s\u00fcrermi\u015f. Ak\u015fam\u00fcst\u00fc ba\u015flan\u0131r ve ertesi g\u00fcn ak\u015fam\u00fcst\u00fc son bulurmu\u015f. Baharatlar tencerenin en alt\u0131na serpilir, \u00fczerine k\u0131r\u0131lm\u0131\u015f nohut eklenir ve kaynar suda bekletilirmi\u015f. Mayay\u0131 yapan ki\u015fi t\u00fcm gece uyumadan mayan\u0131n olu\u015fmas\u0131n\u0131 beklermi\u015f. Mayan\u0131n bulundu\u011fu tencerenin alt\u0131na, i\u00e7erisinde \u0131l\u0131k su olan ba\u015fka bir sini koyarm\u0131\u015f ve t\u00fcm gece o suyun \u0131l\u0131k kalmas\u0131n\u0131 sa\u011flarm\u0131\u015f. Bunu yapmas\u0131n\u0131n nedeni mayay\u0131 daha h\u0131zl\u0131 ve iyi bir \u015fekilde olu\u015fturabilmekmi\u015f. Maya tamamland\u0131\u011f\u0131 anda mayay\u0131 yapan ki\u015fi ilk \u00f6nce kendisine yetecek kadar ay\u0131r\u0131rm\u0131\u015f. Daha sonra geriye kalan mayay\u0131 yan kom\u015fusuna verirmi\u015f, yan kom\u015fusu kendisine ay\u0131rarak di\u011fer kom\u015fuya verirmi\u015f ve bu \u015fekilde maya b\u00fct\u00fcn k\u00f6ye da\u011f\u0131t\u0131l\u0131rm\u0131\u015f. Maya da\u011f\u0131t\u0131ld\u0131ktan hemen sonra ekmek yo\u011frulup bekletilirmi\u015f. E\u011fer ekmek o g\u00fcn yo\u011frulmazsa olmazm\u0131\u015f.
